Eggs and Cabbage “Alfredo”

This is a go-to breakfast for me when I need something that will hold me for hours.
Simple ingredients make a nice, comfort food type meal:)

Eggs and Cabbage “Alfredo”
Serves 1

1 cup chopped cabbage
1 clove garlic sliced paper thin (optional)
1 tablespoon bacon fat, coconut oil or your favorite cooking fat
2 extra large eggs
2-3 tablespoons heavy cream
2 tablespoons grated parmesan cheese
salt and pepper to taste

Saute the cabbage and garlic, if using, until the cabbage is tender but still has a little crispness. Browned edges are a bonus! Taste and add salt and pepper.
Fork beat the eggs and add to the pan. Stir for a few seconds then add the cream and heat through. Sprinkle on the cheese and cook until the eggs are cooked as you like them.
That’s it! Easy peasy, tasty and loaded with energy for your busy day:)

You can use zucchini or yellow squash instead of cabbage, use leftover spaghetti squash, spinach, really any veggie you like.
