Easy BLT Lettuce Wraps

Serves 1:

  • 1T mayonnaise
  • 1tsp vinegar
  • 1T half and half
  • 3 slices bacon, cooked and crumbled
  • 1 large Roma tomato, diced small
  • 2T red onion, diced small
  • 1 cup finely chopped romaine lettuce
  • 1/2 oz sharp cheddar cheese, shredded
  • 4-6 small lettuce leaves for the wrap or “cup”

Mix the mayonnaise, vinegar, and half and half.  You can add just a pinch of sweetener to this, if you like.

Mix everything except the small lettuce leaves, and add salt and pepper to taste (I love  pepper in this, I have used peppered bacon and it works great).

Pile equally into the lettuce leaves and eat like  a taco.

If you prefer the burrito style, use a double layer of larger lettuce leaves, and roll up instead.
